Hello beautiful ladies! Are you having a wonderful weekend so far? Today is the gay pride parade in Stockholm so I might go and check that out since today’s agenda is looking terribly empty as of right now.

But before that, a quick update –

Mom is going to the US in a couple of weeks to visit the relatives and has offered to try to bring me home some goodies if I give her a list. Happy days! So, in order not to miss anything absolutely fabulous, I’m asking for you foodie-experts advice. I’ve read about so many wonderful things on your blogs that are available in the US but, sadly, cannot be found here in La Súede. So, please give me suggestions of great foods or other things that I shoudl ask mom to stock up on. Here are a few things I have though of so far!

Two for one!

Hay! I’m getting bad at updating every evening like I used to, aren’t I? There’s just so much stuff going on and I’ve become too tired to update every evening. So here’s a double post to sum up yesterday and today!

Monday

After breakfast yesterday I took a bikeride to the grocery store to pick up some groceries. It was so warm and I got home a sweaty mess from biking. Buying groceries got me hungry so it was time for lunch when I got back home.

I was half-planning on going to the gym yesterday after lunch, even got my gear on and everything but then changed my mind. Decided I would allow myself a day off from the gym since my arms and legs were really feeling quite sore from all the biking, swimming and gym-going the past couple of days. Plus, I didn’t go completely without exercise since I biked for a good 25 minutes and did my 100 crunches.

In the evening my mom, sister and I along with my brother and his girlfriend went to a café together in town. We thought we’d get a light-ish dinner but the only option that felt mildly appealing to me on the menu (a salad of sorts) they were out of, so I just went with an iced coffee and then made dinner when I got home late in the evening.

After going back and fourth trying to decide what to make I finally just went with my new found love.

After dinner I decided I wanted dessert while watching “The 40 Year Old Virgin” on TV with mom. I ran down to the grocery store and got my favorite treat in the summertime – ice cream! My sister had been raving about Ben&Jerry’s Half Baked so I finally decided to try it!

Anyway, after ice cream and movie it was time for bed and I had the hardest time ever falling asleep last night. Gaah! It was so annoying! I literally spent 3.5 hours tossing and turning and when I finally did fall asleep I only slept for barely an hour before waking up again and found it just as hard to fall back asleep again. Then I was woken extra early this morning because the phone rang. All in all, I think I slept barely about three hours last night.

Today (Tuesday)

I had a doctor’s appointment this morning but the hospital called and cancelled it because apparently the doctor had thrown his back out and was stuck in bed. Poor guy. Didn’t bother me much though because that only made my morning a little less stressful.

Since I was up extra early I had breakfast a little earlier than usual so it would have time to digest before I hit the gym. I did 35 minutes on the treadmill today (5.43 kilometres) and then focused on my arms and did various arm exercises. Spent an hour in the gym and then got home, did my 100 crunches, showered, did my makeup and quickly threw together some lunch because I thought I was in a hurry to go get my photos taken at this casting & production company. Turns out, I wasn’t in a hurry at all since they called just as I was finishing lunch and asked if I could come 45 minutes later since they’d got held up with a meeting.

So, eventually I did go to get my photos taken at the casting and production company. It all went really quickly so I went to my favorite little organic shop to pick up more of the carob covered rice crackers that I love, but they’re still all out! The girl in the shop said she thought that they’d probably not be getting them in again until after the summer. Sadness!

After carob sadness, I went and bought a new book for my surf trip next week (I got The Time Traveller’s Wife) and walked by my sister’s workplace to drop off some painkillers for her because she threw her back out yesterday (what is it with people and hurting their backs?) and could hardly move. And then I headed home, read for a bit and then made an unsurprising dinner.

All afternoon I’ve been craving candy (or something sugar) like woah. No matter what I never seem to be able to kick the craving when I get it and most often end up giving in to it sooner or later. It doesn’t help that I had ice cream yesterday (and twice this past weekend) either. The craving is still there pestering me. I just about gave in and was about to run down to the grocery store to pick up some kind of dessert treat but instead decided to put togehter an evening snack right after dinner.

Surprisingly, this helped! I need to make a mental note of this and remind myself to just have a big evening snack when the cravings are bugging me and I know I’m on the verge of going into binge-mode. I feel content now, the fruit gave me a little bit of sweet and I’ve always loved the rice crackers with peanut butter and cinnamon so that was a nice compliment to the fruit. I can honestly say that the craving has gone from a ten (as in very strong) to about a one or two at the most. I’m very happy about this. As you know, binging and cravings is one of the things I struggle with the most! It’s a truly relieveing feeling to have those annoying, pestering thoughts dissapear (if only for right now).

Now I’m watching useless TV-series and going through all the things I need to do tomorrow in my head – go to the gym (I love it so much I actually look forward to going the evening before), go to waxing appointment (bikini line has got to be trimmed in prep for surf trip) and then in the evening I’m meeting up with my best friend to do the filming thingy and party!

I also really need to start packing…

Question of the day: Have you ever forgot to pack something important before going on a trip?
I’ve forgot a couple of things but as far as I can remember they’ve always been small things (knock on wood) like a top I was planning on bringing or something like that. I hope I don’t forget anything important now for my surf trip!

Erin, the peanut butter genius

I’m feeling a little bit uninspired today so I don’t really have much to blog about aside from food and some exercise. Hope you guys aren’t getting sick of my boring blogs. Sorry I haven’t been around to your blogs in a while, I’ll try to surf around a bit this evening!

Food


10:05am Breakfast. Two rice crackers with Tofutti vegan cream cheese and alfalfa sprouts, a bowl of two kiwis, some strawberries and topped with a little bit of musli mix for some crunch. One of the reasons why I so rarely eat musli/cornflakes is because I seem to get very bloated from it. I thought it might be different this time around but I feel like I’m having the same symptoms as I always do. I just don’t get what it is in the musli that makes me feel bloated.


1:40pm Lunch. I made my usual lunch minus a couple of components. Plain soy yoghurt with nothing in it and a wrap with Tofutti vegan cream cheese, some mustard, lettuce, cucumber and alfalfa. I love the crispiness of iceberg lettuce.


4:45pm Dinner. I was hungry for dinner rather early today. I made my usual salad (lettuce, tomato, red onion, one mushroom, cucumber) and mixed in a little bit of quinoa and topped it with yoghurt and balsamic vinegar. This held me over for about two seconds, so I made…


Dinner. A small bowl of organic brown rice and wakame noodles, mixed in some garlic, fresh basil and about 1/2 tbs of avocado oil. It was good but not as flavorful as I would have hoped.


6:45pm Dessert. When Erin heard of my carob covered rice crackers she instantly offered me her genius advice and suggested I slather these babies in some peanut butter (true Erin-style). So, I decided tonight was THE  night to do this, and let me tell you… it was so good it should be illegal! All credit to Erin! Oh snap, I just thought of an even better combo – WHY didn’t I put cinnamon on top of this!? This was my last carob covered rice cracker too… ah well, next time!

Peanut butter cinnamon

With an apple in my tummy I headed out to Bikram yoga this morning. I was feeling completely unmotivated and uninspired the whole way to Bikram and having a hard time focusing during class today. I don’t know why. It was with one of the toughest teachers, who is also my favorite. It’s hard to explain why her class is tougher than the other ones (especially since it’s always the exact same poses and timing). I guess the way she talks just motivates me more. I always get my butt kicked in her classes.

I got home hungry as a hippo, as usual after Bikram. I had envisioned the following on my way home:


12:55pm Lunch-ish. A whole grain organic tortilla made a wrap with tofu, baby spinach, tomato and alfalfa sprouts. On the side I had a new super favorite – a whole grain quinoa rice cracker with a little bit of peanut butter and cinnamon. Holy yum!


Of course I had to have seconds of that rice cracker with peanut butter and cinnamon.


2:35pm Snack. Feeling hungry only a few hours later, I whipped up a sweet snack. A pink lady apple, along with my mini-bowl that I filled with strawberries (on the bottom) a tablespoon of strawberry rice cream and topped with some raspberries. Nice one.


6:05pm Dinner. I was frustrated about dinner and couldn’t think of anything to make. I finally settled for a classic – a plain salad (lettuce, tomato, carrot, cucumber, alfalfa sprouts, baby spinach, sundried tomatoes and a tbs of hummus) with two slices rye bread topped with Tofutti Sour Supreme and some little sprouts.


9pm Evening snack. I was definitely hungry for an evening snack, I’ve actually been rather hungry all day but feeling totally uninspired or frustrated about what to eat. For an evening snack I went with what I know I’m loving right now – more rice crackers with peanut butter and cinnamon. And two lovely fresh strawberries on the side.

One thousand five hundred?

It was pouring rain when I got up this morning but thankfully it stopped just in time for me to walk trek? speedwalk from the bus up to Bikram Yoga (a 40 minute walk total, to and from) without getting soaked. In the afternoon it cleared up a bit but it hasn’t been a fabulous day like yesterday. You gotta try to enjoy it while you can!

On my way to Bikram I had an apple. And when I got home I had breakfastlunch.


1:55pm Breakfastlunch. A portion of oatmeal with silken tofu and cinnamon mixed in and some berries on top. With my favorite – two slices of date bread with a smudge of peanut butter and some sliced banana. Also, a cup of organic green tea with aloe vera.


4pm Snack. I had to go to the grocery store this afternoon so for damage control I had half a Cocoa Brownie TREK bar in hopes of this calming my cravings, the grocery stores are absolutely packed with easter candy right now which is really pushing me to the limit! This didn’t hold me over long though (but I didn’t get any candy!)


5:15pm Dinner. I sliced about half of a sweet potato (about 60 grams) and baked it completely plain in the oven, then topped it with some mixed spices. With this I had an Amy’s Bean Burrito.


7:15pm Dessert. For dessert I blended some silken tofu with about 1/2 tbs carob powder and 1 tsp agave syrup to make a pudding, I topped it with some berries.  It turned out quite good actually. This was a mini-portion, only about 1/2 cup. I also had one of my litte Black Bean Brownies. And then I moved on to…


Dessert two. I had the last two slices of date bread (toasted) with a smear of peanut butter and sliced banana. Yumm..! And then to top it all off, I had…


Dessert three(!) A second Black Bean Brownie with peanut butter smudged on top. Perfect combo! I had the Black Bean Brownies like this yesterday evening too stealing some of the peanut butter I’d spooned out for the banana to smear on my brownies.

Question/discussion of the day:
Many of you know that I’ve been working on trying to increase my food instake to above a thousand calories a day, even though this scares me a little, and the past two days I have got above a thousand. However, now when I add up my calories and see almost 1,500 kcal I’m slightly terrified. This seems like a lot to me, too much actually, especially considering the low amount of activity I do. So, I’m reaching out to you and asking for your advice: Based on what I have eaten today and with my activity level in mind – would you say that my total amount of calories for today (1 435 kcal) is good/bad/too little/too much?

We all love Peanut Butter

I’m just like the rest of you, a big fan of one of the most wonderful, creamy and delicious things in the world. I’m talking about Peanut Butter, of course.  I just picked up two different brands of organic PB and I’ll be sharing my reviews with you in upcoming posts.
Yesterday I saw a post on For the Love of Peanut Butter about P.B Loco and was in awe over the different flavors available. PB with Chocolate Chip Cookie Dough?! How did they know that peanut butter and chocolate chip cookie dough are two of my favorite flavors in the world?!

I try to stick to organic and vegan as much as possible. Almost all the peanut butters from P.B Loco have milk in them and other ingredients I’m not entirely sure what they are. Stuff like that scares me a little bit. That said, if I were to be overseas I can’t say I wouldn’t buy a jar as a special little treat for myself, just because I’m too curious not to try it.

There are so many PB brands out there, another brand I would like to try is Peanut Butter & Co. Peanut butter isn’t such a big thing in my country, when I was younger my friends thought I’d lost it when I told them about PB&J sandwhiches (I am half American half Swedish).

And let’s not forget PB2 which I would love to try! Why are these products and shops not available here? Whenever I go to the US one of the first things I always want to do is go to Whole Foods and Trader Joe’s. It’s my favorite thing to do. I could spend a week in Whole Foods. I love that store!

First post on Facineating!

I’ll skip the long introduction (you’ll get to know me eventually by following my blog). This is my first post and the beginning of a lifetime of healthy eating habits. Cheers!

Now, let’s get straight to business, here’s what has been on my menu today:

9:50am For breakfast I had my usual, which I absolutely love: a bowl of fruit (1 apple, 1 kiwi and 1/2 cup raspberries and strawberries), two organic whole wheat quinoa rice crackers with my hummus and some arugula and a cup of organic green tea.

I met a friend in town for lunch but wasn’t hungry since I’d just eaten breakfast so I had a cup of green tea while she had her lunch. (Sorry, no picture.)

3:05pm After walking around in town and running some errands I arrived home and had lunch. I had  a bowl (about 1 1/2 cups) of oats with about 1/2 cup of raspberries mixed in while cooking. I topped it with a nice spoonful of creamy organic peanut butter. This was my first time having a spoonful of peanut butter in my oats, it was so good!  And of course, another cup of organic green tea.

6:20pm Dinner (sorry about the bad picture quality, kitchen lighting…) was a bowl of carrots and cabbage (1 carrot, 1 cup of cabbage, 1 tsp red curry paste) topped off with a tablespoon of my hummus. I also had an organic whole wheat quinoa rice cracker and another cup of organic green tea.


6:50pm
Although I felt filled up from my dinner I was craving some kind of treat, and the creamy peanut butter I’d just picked up at an organic shop today was calling my name. I whipped out a small spoonful of it and spread it on a banana. I also threw together a small bowl of about 1/2 cup rice milk, 1/2 cup cereal puffs and 1 tbs of goji berries. I didn’t even wind up using the whole dollop of peanut butter. Now I’m full! (Again, sorry about the bad picture quality)

Total calorie intake: ~993 kcal

Exercise today:

25 dumbell lifts (2kg weights)
20 lunges with dumbells
10 “girly” pushups
